Tōka, a Japanese restaurant in Surry Hills, Sydney

A single continuous shot: from a table set for dinner, back through the lamplit dining room, out past the noren and onto a wet laneway at night, facing the restaurant’s glowing windows.

About

Tōka is a Japanese restaurant on Wyvern Lane in Surry Hills. We serve one set menu of eight courses, and cook most of it over charcoal.

The dining room has 26 seats and the counter has eight. We open for dinner Wednesday to Saturday, with sittings at 5:30 and 8:15, and for a single lunch on Sunday.

Fish comes from the Sydney Fish Market each morning, and some of it is aged in our cool room for up to ten days before we serve it. Most of the vegetables come from two farms, one in the Southern Highlands and one in northern Tasmania. The menu changes when they have something new.

Tōka () is Japanese for lamplight.

The counter before service

Chef Ren Kajiwara

Ren grew up in Kanazawa and spent eleven years cooking in Kyoto, the last four at a kaiseki restaurant in Gion. He moved to Sydney in 2019 and opened Tōka in 2023.

He cooks at the counter most nights and sharpens his own knives before every service. The dining room and the sake list are run by Mia Lindqvist, his business partner, who spent six years at restaurants in Melbourne and Tokyo.
